An Overview About Cold Storage - Cold storage is a warehousing room specially designed using certain room temperature conditions and used to store a wide range of products especially for products that are quickly broken (perishable) to maintain its freshness.

Currently cold storage business is in demand by various industrial sectors including the pharmaceutical industry, food processing, fishery industry, retail, restaurant chain store, meat importer, agricultural market, and so on. Cold storage facilities owned by logistics companies in general in addition to being used for their benefit, some warehouse rooms are also rented to other parties.

Cold storage has several commonly known types, namely:
  • Chilled Room
  • freezer room
  • Blast Freezer
  • blast chiller.
The differences between the four are as follows:
  • The chilled room and freezer room are usually used to store products according to certain temperature conditions.
  • Blast freezer and blast chiller are used for product storage under certain temperature conditions but with a fast time for cooling.
  • Chilled rooms have low-temperature conditions between 1 degree Celsius – 7 degrees Celsius. Chilled rooms are used to store fresh ingredients such as vegetables, fruits, and other foods things that can only last two months (60 days).
The Thawing room can also function as a chilled room with a temperature setting of 10 degrees Celsius. Usually, store these ingredients to increase the temperature of fresh raw materials before the cooking process. 

Freezer rooms have temperature conditions at -15 degrees Celsius - 20 degrees Celsius usually used to store meat, milk, cheese, and so on that require freezing temperatures. A blast chiller is used to cool the raw materials quickly after cooking is complete, the temperature used is 1degree Celsius - 4 degrees Celsius. 

Blast Freezer is used to cool raw materials quickly for frozen or processed foods and the temperature used is generally -20 degrees Celsius-35 degrees Celsius.

Blast freezers and blast chillers are usually used to avoid contamination from bacteria, maintain the taste of food to maintain quality, reduce moisture content, and keep nutrient levels awake. 

In the process of storage of certain raw materials/products need to pay attention to the appropriate temperature because if wrong in temperature settings or the placement of cold storage type will have an impact on the quality of the product itself.

The main thing to note in cold storage is temperature stability. This is done because if the room temperature is unstable, not only the stored product will be damaged, but also the entire cooling machine in the room will be damaged. 

Maintaining the stability of air temperature in cold storage is a challenge because the process of unloading goods from vehicles or trucks carrying products into cold storage, or vice versa, will open a gap in the warehouse door so that the heat temperature from the outside will enter and damage the temperature stability inside the cold storage.

The main challenge in maintaining and maintaining temperature stability in cold storage at the time of loading and unloading of goods can be overcome by the loading system. Loading system makes the latest docking equipment innovation, stepped dock system that allows vehicles or trucks of goods to open doors inside the warehouse so that there are no gaps open during loading and unloading.

In addition to temperature stability, some things to note in cold storage management include:
  • Clean & Calibrate. Cooling Machine in the warehouse must be ensured always clean and in strict maintenance control
  • Know the Hot and Cold Area. If in a warehouse area there are several different locations temperature, then it must be ensured the product is placed according to its temperature needs
  • Pre-Cooling is required for some products before entering the cold storage
  • Ensure that air pollution and pest disturbances do not occur in cold storage
  • Perform rigorous product inspection in the receiving process
